An increasingly worsening allergy to eggs, which developed somewhere around puberty, has pretty much deprived me of deviled, fried, and hard-boiled eggs for the past 20 years. It's amazing how much you can miss these little guys.
I recently ran across a deviled egg recipe that uses tofu in the place of egg yolks. Not only can I eat these, but they're practically cholesterol free (no mayo either). Apparently, it's only the yolk that I react to. I gave the recipe a shot, and brought them to a family get together last weekend.
I can safely tell you the other half (ie, those who eat eggs with reckless abandon) have no place for the "eggless" deviled eggs. Not to mention tofu is a word most of my family members have never even uttered. Some politely tried one egg, but I went home with at least half of the 22 deviled eggs I brought. I liked them, and I'll take any excuse to try something new.
I may not make it again, but at least there are options out there!
Now, if I could just find a way to fake the sunny side up fried egg. ...Oh, how I've missed you.
